Apple Turnovers

Apple Turnovers It is apple time! Steve has always tried to get me to make apple turnovers, but I have always resisted because I had something else I was wanting to do with apples this time of the year. But, this year I made them, and I am so glad I finally did! They were wonderful! And, they were super easy to make.

Apple Turnovers I used frozen puff pastry, thawed and cut in squares.

Apple Turnovers And then, added the homemade apple filling, folded it over, and pressed the edges with a fork.

Apple Turnovers Then, I baked and glazed them. So good! And, all done in less than an hour!

Ingredients

  • 1 box (2 sheets) frozen puff pastry, thawed
  • 3 large apples, peeled and chopped (I used Granny Smith.)
  • juice of one lemon
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla
  • 2 tablespoons water

Instructions

  1. Preheat oven to 400 degrees.
  2. Toss the apples in the lemon juice to prevent browning. I actually do this as I go along chopping the apples.
  3. In a medium saucepan over medium heat, stir together apples, sugar, cinnamon, and cornstarch.
  4. Cook, stirring constantly until apples are tender and mixture has thickened
  5. Cut both sheets of puff pastry into squares. You will have 8 squares. Place on two cookie sheets.
  6. Top each pastry square with 3-4 tablespoons of apple mixture. You won’t use quite all of it, but it is good to eat right by itself.
  7. Fold diagonal ends over, so that you have triangles. Press edges with a fork to seal.
  8. Bake for 20-25 minutes or until golden. I had to put mine on separate racks, so I switched them after 15 minutes.
  9. While turnovers are baking, stir together confectioners’ sugar, vanilla, and water.
  10. When turnovers are done, drizzle glaze over the top.
